Smoky Bean, Bacon, and California Avocado Tostadas

(Step 1)

2 ripe, California avocados

2 tablespoons extra virgin olive oil

3 tablespoons freshly squeezed lime juice

2 scallions, very thinly sliced

½ bunch fresh cilantro, roughly chopped

Salt and freshly ground black pepper to taste

(Step 2)

3 cups water

1 cup fresh green beans - trimmed and cut on diagonal into 1-inch pieces.

4 slices bacon, thinly sliced crosswise
