Employees' excellence celebrated at La Caseta

FALLBROOK — La Caseta Fine Mexican Food has had the privilege of having many great long-term employees over the years.

However, having three excellent long-term employees – Jennifer Cox, Laura Vandivort and Tony Vasquez – all celebrating 20 years of service within months of each other is almost unheard of in the restaurant industry.

Cox started working at La Caseta when she was 18 years old. During her 20 years of employment she has married, is raising two children, has obtained two college degrees and is now an elementary schoolteacher. She currently fills in as an assistant manager on weekends.

Vandivort started working at La Caseta when she moved to Fallbrook with her husband and 1-year-old daughter. She has raised two children while working at the restaurant as a waitress and catering manager.

Her daughter Kimmy is about to graduate from USC. Her son Kevin, a senior at Fallbrook High School, was just recently named the school’s Outstanding Senior Boy.

Vasquez came to La Caseta in 1987. He has been raising four children (two sons and two daughters) while serving as the restaurant chef.

La Caseta will have a picnic/party to honor these employees.

Owner Delos W. Eyer states that he considers it an honor to have these wonderful and loyal long-term employees.

“They are an integral part of this operation,” he said. “We owe a lot of our success to employees like these and the rest of our great staff.”

During the month of July, La Caseta will be celebrating its 25th anniversary with festivities and food and drink specials.

“We are happy to have been serving Fallbrook for 25 years,” Eyer added.
