Diabetic Holiday Cooking Class held at hospital

The smell of holiday cooking filled the air at Fallbrook Hospital as chef Stephen Spencer cooked up a holiday menu of delicious food for members of the Diabetes Support Group on October 18. The low-fat, low-sugar menu included puree of winter squash soup, breast of chicken with apricots and pecans, cranberry-orange brown rice, zucchini and mushroom medley, orange panna cotta and feather-light chocolate cake.
