La Caseta cuisine described as flavorful 'California Mexican'

Over the years, La Caseta Fine Mexican Food has set impressive standards with its cuisine. From its award-winning salsa to tasty appetizers and sizzling entrees, its bold, handcrafted flavors are truly representative of south of the border.

“We cook foods that are representative of all regions of Mexico,” said owner Delos Eyer. “I call it California Mexican; traditional Mexican-influenced foods with a bit of Tex Mex and California flare.”

The doors to La Caseta opened in 1983 and Eyer took ownership in 1991. In the last 23 years, Eyer said, it has kept the same day chef and three other employees. Several team members have been with La Caseta for nearly a decade.

“We have had a tremendous amount of longevity with our core staff, which has kept us very consistent with our food,” Eyer said. “We have always served very generous portions and have tried to maintain very reasonable prices.”

La Caseta’s marinated and grilled meats, salsas, and sauces are a mouth-watering experience and the seasonal dishes offered add further depth to the menu.

A meal at La Caseta begins with fresh tortilla chips and salsa. While perusing the menu, one will notice a long list of delectable entrees. Some of the most popular are the carne asada, Shrimp Diablo and Tostada Suprema.

“Our carne asada steak is hand-cut, choice sirloin that is marinated for two days and then flame broiled,” Eyer said. “Our Shrimp Diablo is charbroiled shrimp served in our zesty cream herbed cilantro sauce.”

The Tostada Suprema, piled high with scrumptious toppings, is layered with delicious flavors.

And if there’s room for dessert, Eyer offers a couple recommendations.

“We make an outstanding flan for people who like Mexican custard – we have orange caramel flan year round and seasonal variations,” Eyer said.

Xango, another sublime dessert, is a hot chimichanga filled with caramel banana cheesecake. It gets even tastier after its rolled in cinnamon sugar and topped with vanilla ice cream, whipped cream, and laced with raspberry caramel sauce.

With such culinary talents, it’s no wonder La Caseta has received its notable share of accolades including being recognized in the 1992 Guinness Book of Records for the World’s Largest Burrito, Fallbrook Chamber of Commerce Small Business of the Year in 1996, two time guacamole and multiple salsa wins in the Avocado Festival as well as winning the grand champion award for best avocado dish, Best Taste of Fallbrook in 2008, and more.

La Caseta has also been featured in Sunset, Westways, San Diego Home and Garden and LA magazines. Eyer, himself, has made television appearances on FOX and KUSI stations.

Guests are offered different dining atmospheres at La Caseta: an eclectic sports bar, a dining room perfectly suited for families and large groups, and a charming outdoor patio.

It also provides convenient takeout. And when it comes to bringing that rich and flavorful taste to an event, La Caseta can fulfill those catering needs.

“We are very accommodating in working with people to meet their vision in what they want their party to be,” Eyer said. “And on the ‘day of’ we want them to feel like a guest at their own party.”

La Caseta offers two levels of catering services. Bulk food prepared on party trays for pickup and a full scale catering operation delivered to and served at an event. The latter can be casual or enhanced to a fine dining experience.

“We are licensed and insured for offsite food and alcohol beverage catering and have a trained, uniformed staff,” Eyer said. “We have something for every budget.”

With the end of a year approaching and a new one ready to begin, Eyer said he extends a warm thank you to all the great customers who have supported La Caseta.
