Bowtie Pasta with Avocado


1 12oz bowtie pasta ½ C olive oil

½ Tbs olive oil ½ C fresh lemon juice

2 avocados, diced 2 tsp salt

3 large Roma tomatoes, diced 2 tsp oregano

2 green onions, chopped 2 tsp garlic powder

4-5 Tbs fresh basil chopped

In a large pot bring salted water to a boil. Add the pasta and cook until done. Drain pasta, add ½ Tbs olive oil, and stir gently. Transfer to a serving platter.

Mix diced tomatoes, chopped green onions, diced avocados, and fresh basil and pour some of the dressing over the vegetables. Pour avocado mixture over the pasta and toss gently.

Add more dressing as desired. Delicious!
