Trinitas Cellars to host wine dinner at Pala Casino

PALA – Tickets are being sold for a five-course wine dinner hosted by Napa’s Trinitas Cellars at Pala Casino Spa & Resort, Thursday, Oct. 25, 7 p.m. inside the casino’s underground wine cave.

The evening will start with a first course of grilled marinated shrimp and corn relish salad paired with a sauvignon blanc from Napa Valley. The second course will feature bacon-wrapped grouper with saffron sweet pea risotto with nage and chardonnay from Carneros. The third course will offer pistachio-crusted lamb loin and Brussel sprout hash, red wine reduction with petite sirah from Contra Costa. Fourth will be sauerbraten short ribs, horseradish potato, garlic chips and sweet and sour red cabbage with cabernet sauvignon from Napa Valley. Chef Albert Cruz’ trio of chocolates will be served for dessert with Late Harvest sauvignon blanc.

Tim and Steph Busch opened Trinitas Cellars in 2002, and the winery continues to be run as a true family business with son and daughter-in-law, Garrett and Betsy Busch, currently in charge. Trinitas Cellars celebrates the connection between sun, soil and humanity, providing a variety of wines from Northern California.

Reservations for the event are $85 per person plus an 18 percent gratuity and should be made by calling (877) 946-7252. Guests should ask to “book the October wine dinner.”
